During the lockdown - as many of you have gathered and I'm sure many of you are doing the same - I've been baking an awful lot! I've experimented with ingredients I would have never looked at twice. This has given me the ability and confidence to try new recipes and I'm on a roll! I want to bake something but I don't want to bake something in the oven. Last week I did some experimenting with baking ingredients. We all love the idea of snacking on chocolate chip cookie dough right? However, have you considered trying a healthier-ish version of cookie dough? I tried this recipe on 2 separate occasions, and neither got to the standard I would expect! The first attempt created a very mushy dough and the second attempt created a rock solid dough. However on the third attempt I managed to create the perfect consistency and that comes down to chopping and changing some ingredients around.

Servings between 16 to 20 balls.
• 1 and half cup of grounded Almonds
• 2 tbsp of Coconut cream (top thick layer from a coconut milk can)
• 2 tbsp Coconut flour
• 3 tbsp grounded Coconut flakes
• 2 tbsp Maple Syrup
• 1/4 tsp sea salt
• 3 tbsp melted Coconut oil
• 1 and half tsp of Vanilla extract
• 2 tbsp chopped chocolate
• 1 tbsp chocolate chips
Add all the above ingredients together aside from the chocolate. Mix well with a spatula ensuring all the ingredients create a thickened dough. Lastly add your chocolate and fold in well to the dough.
You can either scoop them out with a small ice cream scoop or make them on to dough balls.
Perfect for snacking!
It really is that easy.. So put away the Twix or Snickers and pick up a spatula because always remember, when you make it, you will gain more satisfaction out of that.
