Simply Lentils

Ingredients


1 cup red lentils

1 fresh tomato

1 medium size onion

Pinch on turmeric

Salt to taste

3 to 4 tbsp Ghee {Clarified Butter}

1 tsp cumin

1 tsp mustard seeds

1 to 2 tsp crushed green chillies or more {suit to your taste}

2 heaped crushed garlic





Method


Wash your red lentils and let them soak for approximately 20 minutes. In the meantime roughly chop the medium onion, tomato and crush some green chillies then leave it to one side.


Boil your lentils in water (just enough water to cover your lentils) add salt and tumeric. The lentils should take approximately 20 to 25 minutes to cook. The texture will be where you can see the grains of lentil dissolving.





In a separate pot on medium heat, add ghee, cumin and mustard seeds. Maintain the heat making sure the seeds don't burn. Once the cumin seeds start turning brown, add your crushed garlic and let this cook on medium heat until the garlic starts turning light brown.





Add onions, tomatoes and green chillies to the lentils. Whisk all the ingredients until it's a thick runny paste. Finally pour the lentil mix in to the pot along with the cumin, mustard seeds and garlic. Increase the heat to high until you see the lentil boiling and then reduce the heat to let all the mixture cook for approximately 10 minutes until it becomes thick. Make sure to add water if it gets too thick.


Finally garnish with coriander and serve with boiled rice!
